  STUNNING, KNOCK-OUT CARROT CAKE. THANK YOU, BE KIND BAKEHOUSE for supplying this amazing cake for my fiance's birthday weekend in the Del Water Gap. Our friends DEVOURED this cake in no time to nothing less than rave reviews (from a group of serious Philly foodies). Lucious, fluffy, springy, layers of flavor, balanced sweetness, pure fun.

  My hubby & I were in the Honesdale area to check out a popular breakfast place but to our dismay, it was closed this weekend. Determined not to waste our 45 min drive, we walked around the pretty Honesdale Main Street & checked out the shops. That’s when we stumbled upon this cute little bakery with a sweet name, “Be Kind Bake House”. How can one resist, right? We were immediately greeted by this friendly young lady behind the counter & the array of interesting & delectable looking goodies caught our attention right away! I love that they offer unique baked goods. Of course we bought a few of each: everything bagel bites, macha white chocolate brownies, pine needle lemon shortbread cookies, blueberry lavender cookie (I think?) & their salted honey pie. Every single one was delicious! My favorite of all though was the Pine needle shortbread cookies. The hint of pine flavor is heavenly! And I love that it wasn’t terribly sweet. It went perfectly with my tea later in the day. We’ve found our new favorite bakery & we can’t wait to go there again this weekend! It is worth the drive.

  Be Kind Bake House is the best! I'm a chocolate chip cookie fiend, obsessed with finding the perfect recipe, and here it is: the metaphorical Holy Grail of cookies. The outside of the cookie is crisp enough that you can taste the cooked butter, and the middle is soft but not soggy. A chocolate chip cookie is best judged by the bites that don't have chocolate in them - and this is IT. We stopped by two days in a row because I'm frankly a glutton and couldn't resist. No shame. The raspberry rosewater cookie was also fantastic - softer texture similar to a scone to hold the moisture from the berries (but much lighter). The icing is perfect, too - working with rosewater is a delicate dance, as too much can ruin the flavor of whatever you're trying to make. Just the right level of sweetness!
  
  Yesterday, we tried the lemon pine needle shortbread and everything bagel bites. Shortbread? 10/10 on cuteness. The lemon-pine flavor was bright and perfect for the morning. The everything bagel bites? Absolutely amazing. I thought I'd bite into it to find plain cream cheese filling - but no, no, no... this was CHIVE cream cheese. The chive flavor was crisp, fresh, bright in the biscuit-bagel reminiscent dough. I don't even have to tell you that they don't skimp on the seasoning, either.
  
  Big love to Be Kind!!! Made our trip from Pittsburgh so special!

  This is one of my favorite bakeries in the area & the sweetest staff too. Every Christmas I provide treats for my tenants and Be Kind does a wonderful job with the selection & packaging. I love their chocolate chip cookies - they are one of the best. One of my recipients loves the muffins - they do not feel commercially produced as everything is handmade. Excellent coffee too! Each time I visit downtown Honesdale, I stop in... highly recommend.

  This past Saturday I went to visit and ordered so many baked goodies from cookies to pies 🤤
  
  1. I ordered their ginger cookie and chocolate chip cookie. The cookies were so moist and delicious. The ginger cookies had just came out of the oven when I went and boy do they taste amazing Warmed up!
  
  2. Blueberry and pumpkin muffins...as it’s Fall pumpkin is a must! So I took full advantage and was not disappointed! It melted in my mouth and left my mouth watering for more.
  
  3. Lastly, their pumpkin pie. (No I didn’t eat all these goodies in one sitting but I could’ve with how good everything tasted) I warmed it up the next day as a dessert after dinner. It was SCRUMPTIOUS! I am definitely ordering a pumpkin pie from them for Thanksgiving! 🥧
  
  I can’t wait to be back to order more goodies and try out their new baked items. This weekend will be their scary goodies 👻❤️
