Greg is fantastic at what he does! Everything is packaged clearly, vacuum sealed, and labeled. His cuts are fantastic and the sausage - gyro, chorizo, sweet Italian, hot Italian are all phenomenal! Some of the best ground meat around too! My favorite part: all I have to do is gut it properly and bring my whole deer to him. He will do the rest! Plus they will even skin it for mounts! Can’t beat that!!! I’ve been using him for 3 years now and the quality only get better! Highly recommend this butchery to anyone looking for deer processing done right for the right price! A+++
I’ve been hunting and having deer processed that I’ve harvested in the Catskill region for over 40 year’s now. I believe I have found the absolute best deer processing facility in the Catskill’s when I was recommended to give Down the Road Butchery a try.
The owner Greg is a super friendly guy who takes pride in what he does as a butcher, his processing facility is a professional and immaculately clean shop. He will take notes on the types of cuts you want made from your animal and that is exactly what you get.
Greg offers a complete menu of options, one of which is 3 different types of sausage, you can order sweet and hot Italian style and one I had never seen offered anywhere else, a GYRO sausage. Let me tell you, if you like Greek style GYRO meat, you are going to love these GYRO sausage. I’ve had Gyro’s in some excellent Greek restaurants in NYC, and I can honestly say these are right up there with the best GYRO meat I ever ate.
One other thing which should be noted, Greg is also a Chef, he is a master at blending various spices that will thrill your tastebuds.
At other wild game processing plants that I’ve been to over the year’s, many times I felt I didn’t get back as much meat from the butcher as I should have, this based on the weight of the animal I had processed. This seems to be a common issue based on many other hunter’s I’ve spoken with over the years.
I was very pleasantly surprised when I picked up my venison from Greg, it was two BIG boxes filled with beautifully packaged and vacuum sealed product, much more than I thought I would get back.
As you can see by the length of my review, I was over the top happy with the services Down the Road Butchery provided. This will be the ONLY place for me to bring any future harvests to be processed. Give them a try, you will be happy you did.

I have been using Greg as my butcher for the last 5 years or so. He runs an excellent shop. His place is clean and organized, and he does a great job with all of the cuts and sausage making. He is flexible about drop off hours, and he is very accommodating of special requests. I have been hunting for 38 years and I have been to a lot of processors, but Greg is at the top of the list. In addition to his great work, he also happens to be a really nice guy. I highly recommend his services.

Greg and his crew are highly knowledgable and professional, super friendly and happy to answer questions. The shop is new and clean. Services and prices are clearly published on their website (or by phone), so no surprises or upcharges. They can do basic processing or break your dear down into custom cuts. Best of all, the shop has a cheerful, enthusiastic vibe even at the busiest times of the season. Make sure you call ahead!
